Garlic Herb Roasted Chicken
- 2 tbsp olive oil
- 2 tbsp mixed chopped fresh herbs, like thyme, rosemary, sage
- 1 tbsp chicken seasoning, like Mrs. Dash
- 2 tsp fine sea salt
- 1 tsp ground black pepper
- 1 (6 3/4 lb) roaster chicken
- 1/2 cup peeled garlic cloves
- 1 None large onion, peeled, sliced
- 3 cups chicken broth
- 1/2 cup white wine
- Preheat oven to 350u0b0F. Combine olive oil, herbs, seasoning, salt and pepper.
- Place chicken on a rack in a roasting pan and rub with oil mixture. Place garlic cloves, onion and 1 1/2 cups chicken broth in bottom of pan. Roast for 1 hour 30 mins, or until internal temperature is 175u0b0F. Transfer chicken to a platter, cover and let rest for 20 mins.
- Meanwhile, for the pan sauce, skim fat from pan juices. Place pan over medium heat. Add wine. Bring to a boil, scraping up brown bits from bottom pan. Mash garlic and onion with a fork. Addrnremaining chicken broth and simmer for 5 mins. Season.
