Grilled Chicken And Avocado Melt
- 4 None chicken breast (about 1 lb), cooked
- 1/4 cup mayonnaise
- 1/4 cup tomato sauce
- 2 None green onions, finely sliced
- 1 tbsp chopped parsley
- 1/2 None turkish flat bread, split, halved
- 1 None firm ripe avocado, peeled, sliced
- 4 slices cheddar or swiss cheese
- None None ground paprika, to sprinkle
- Preheat broiler on high.
- Cut each chicken breast into four long, thin slices. Combine mayonnaise with tomato sauce, half the green onion and parsley.
- Lightly toast bread under broiler. Spread mayonnaise mixture onto each slice of bread. Top with one piece of chicken and an avocado slice and season to taste.
- Top with cheese, sprinkle with a little paprika and remaining green onion.
- Grill 1-2 minutes, until cheese melts and is golden. Serve.
