Roasted Portobello Mushrooms With Garlic And Feta
- 8 None portobello mushrooms, stems trimmed, wiped clean
- 2 cloves garlic, thinly sliced
- 2 tsp fresh thyme leaves
- 2 tbsp olive oil
- 2 1/2 tbsp butter
- 3.5 oz baby spinach
- 3.5 oz feta cheese, crumbled
- 1 tbsp fresh chives, snipped
- None None balsamic vinegar, to serve
- None None roasted cherry tomatoes, to serve
- Preheat oven to 400u0b0F. Place mushrooms, stem side up, on a large baking tray. Sprinkle with garlic and thyme and drizzle with olive oil. Season. Bake for 15-20 mins, or until mushrooms are tender.
- Meanwhile, heat butter in a large frying pan over high heat. Saute spinach for 1 min, until just wilted. Transfer to serving plates, top with mushrooms and sprinkle with feta and chives. Drizzle with balsamic. Serve with roasted tomatoes.
