Scalloped Potatoes
- 4 slices bacon, chopped
- 2 1/4 lb potatoes, peeled, sliced thinly
- 3.5 oz mozzarella cheese, grated
- 1 (15 oz) can cream of mushroom soup
- 1 1/4 cups heavy cream
- 2 tsp fresh thyme, chopped + extra, to serve
- Preheat oven to 400u0b0F. Lightly grease a shallow baking dish. Heat a large saucepan over high heat and cook bacon for 3-4 mins, until golden. Drain on paper towels. Layer 1/3 potato slices in prepared dish. Sprinkle with 1/3 bacon and 1/3 cheese. Repeat with remaining potato, bacon and cheese.
- Meanwhile, heat soup, cream and thyme, stirring, until almost boiling. Pour over potatoes, shaking dish to allow mixture to run through. Bake, covered, for 40 mins. Uncover and bake for 25-30 mins, until top is golden. Let cool for 10 mins then serve sprinkled with reserved thyme.
