Lime Chicken On Lemongrass Skewers

  1. Combine finely chopped lemongrass, peanut oil, lime zest and cilantro in a large shallow dish.
  2. Thread 3 strips of chicken onto each lemongrass stalk. Add to lemongrass marinade and turn to coat. Cover and chill for 3 hours, or overnight.
  3. Preheat grill. Cook skewers until chicken is golden brown and cooked through.
  4. Meanwhile, whisk together remaining ingredients. Serve with chicken skewers.
