Pork Chops With Dijon

  1. Preheat oven to 425u0b0F. Place potatoes in a large roasting pan. Coat with oil, season and bake for 25 mins, turning halfway through cooking.
  2. Meanwhile, season pork. Melt butter in a frying pan over medium heat. Cook pork for 2 mins per side, or until browned. Combine mustard with 1/2 cup water then pour over pork. Reduce heat to low, cover and cook for 10 mins, or until pork is cooked through. Set aside, cover and keep warm.
  3. Cook mustard sauce, uncovered, stirring occasionally, over low heat for 3 mins, or until reduced by half. Add cream and cook for 2 mins. Distribute pork between serving plates. Pour sauce over pork. Serve with potatoes and beans. Sprinkle with parsley.
