Pork Chops With Dijon
- 4 None potatoes, cut into 3/4 inch pieces
- 4 None pork chops
- 1 1/2 tbsp butter
- 2 tbsp dijon mustard
- 1/4 cup heavy cream
- 7 oz green beans, steamed
- 2 tbsp fresh flat-leaf parsley, chopped
- Preheat oven to 425u0b0F. Place potatoes in a large roasting pan. Coat with oil, season and bake for 25 mins, turning halfway through cooking.
- Meanwhile, season pork. Melt butter in a frying pan over medium heat. Cook pork for 2 mins per side, or until browned. Combine mustard with 1/2 cup water then pour over pork. Reduce heat to low, cover and cook for 10 mins, or until pork is cooked through. Set aside, cover and keep warm.
- Cook mustard sauce, uncovered, stirring occasionally, over low heat for 3 mins, or until reduced by half. Add cream and cook for 2 mins. Distribute pork between serving plates. Pour sauce over pork. Serve with potatoes and beans. Sprinkle with parsley.
