Homemade Sausage With Gravy
- 1 lb pork shoulder, chopped
- 10.5 oz pork belly, chopped
- 1/2 cup chopped fresh parsley leaves, plus extra to garnish
- 2 tbsp tomato chutney
- 1 tbsp salt
- 2 cloves garlic, minced
- 1 None bird's eye chili, chopped
- 1/2 tsp paprika
- 1 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 1/2 cup white wine
- 1/2 cup chicken stock
- None None mashed potatoes, to serve
- Combine pork, pork belly, parsley, chutney, salt, garlic, chili and paprika in a food processor. Process until pork is minced. Shape into 8 - 2 3/4 inch sausages. Place on a tray and chill, covered, for 30 mins.
- Heat oil in a frying pan over medium heat. Cook sausages for 10-12 mins, until well browned and cooked through. Drain on paper towels.
- Add flour to pan and cook, stirring, for 1 min. Add wine and cook for 1 min. Gradually stir in stock until smooth. Bring to a boil then reduce heat and simmer for 3 mins. Season.
- Garnish sausages with parsley. Serve with mashed potatoes and gravy.
