Kiwi Fruit Jam

  1. Cut peeled kiwi fruit into eighths; discard seeds and core. Blend or process pectin, lemon juice, 1 tbsp of the sugar and 2 tbsp water until smooth. Add kiwis; process until coarsely chopped.
  2. Combine kiwi fruit mixture with remaining sugar in a large saucepan. Stir on high heat, without boiling, until sugar has dissolved. Boil, stirring occasionally, for 10 mins, or until jam jells when tested. (To test for a jam's setting point, place a small quantity of the mixture onto a saucer. Allow to cool. If its ready, it will gel and wrinkle when moved.)
  3. Tint with food color, if desired. Pour into hot sterilized jars and seal immediately. Store in a cool dry place. Once opened, store in the refrigerator.
