Chicken Roll-Ups With Chickpea Salad
- 250 g Greek-style plain yogurt
- 2 cloves garlic, crushed
- 1 None small Lebanese cucumber, seeds removed, finely chopped
- 4 None pieces lavash or mountain bread
- 1/2 None small barbecued chicken, skin and bones discarded, meat shredded
- 1/3 None iceberg lettuce, shredded
- 5-6 sprigs mint, coarsely chopped
- 400 g can chickpeas, rinsed
- 3 None medium tomatoes, coarsely chopped
- 1 None small red onion, finely chopped
- 2 tbsp ready-made Greek dressing
- Combine yogurt, garlic and cucumber in a small bowl. Place bread on a clean work surface. Spread half the yogurt mixture evenly over bread.
- Top bread with chicken and lettuce. Roll tightly to enclose filling. Cut in half diagonally.
- Combine mint, chickpeas, tomato, onion and dressing in a medium bowl. Serve roll-ups with salad and remaining yogurt mixture.
