Sirloin Steak With Mustard Sauce And Mashed Potatoes
- 4 None baguette slices, cubed
- 5 tbsp vegetable oil
- 1 None onion, finely diced
- 1 None carrot, trimmed and finely diced
- 2/3 cup white wine
- 1/3 cup white wine vinegar
- 1 cup heavy cream
- 1/4 cup wholegrain mustard
- 2 lbs potatoes, peeled and chopped
- 1/2 cup milk, warmed
- 1 tbsp butter
- Pinch None freshly grated nutmeg
- 4 None sirloin steaks
- Preheat the oven to 300u0b0F. Spread the bread on a baking sheet; toss with 2 tbsp of the oil and season. Bake for 10-15 mins until crisp.
- Meanwhile, heat 1 tbsp of the oil in a medium saucepan on medium heat. Saute the onion and carrot for 2-3 mins. Deglaze the pan with white wine and vinegar. Simmer for 4-5 mins. Add the cream and mustard; simmer until heated through. Season.
- Cook the potatoes in boiling, salted water for 12-15 mins until tender; drain. Add the milk, butter and nutmeg to the potatoes; mash until smooth. Season.
- Meanwhile, heat the remaining 2 tbsp oil in a large skillet on high heat. Cook the steaks for 3 mins on each side, or until cooked to desired doneness. Season. Remove from the pan. Let stand, loosely covered in foil, for 5 mins.
- Divide the potatoes and steaks among 4 plates. Spoon the sauce over the top and sprinkle with croutons. Serve.
