Pear And Raisin Bread

  1. Drain pears, reserving 1/2 cup of the juice. Thinly slice one of the pear halves. Finely chop remaining pears.
  2. Preheat the oven to 350u0b0F. Grease and line an 8 x 4 inch loaf pan with parchment paper, extending paper at long sides for handles.
  3. Beat butter, sugar and vanilla in a large bowl with an electric mixer until light and creamy. Mix flours and baking soda in a medium bowl. Alternately, fold flour mixture and reserved juice into batter until combined. Stir in chopped pear and raisins. Spoon into prepared pan, smoothing surface. Fan out sliced pear and arrange on top.
  4. Bake for 50 mins, or until a toothpick inserted into center comes out clean. Cool in pan for 5 mins. Remove from pan; cool completely on a wire rack.
