Turkey Quesadillas With Avocado Salsa

  1. Heat 1 tbsp oil in a large frying pan over medium heat. Saute pepper, onion and garlic for 3-4 mins, until tender. Add cumin and cayenne and cook, stirring, for 1 min. Set aside.
  2. Place 6 tortillas on a clean work surface. Top each with 1 oz cheese, pepper mix, turkey and another 1 oz cheese. Cover with remaining tortillas. Working in batches, heat oil in a large frying pan over medium heat and cook quesadillas for 2-3 mins per side, or until golden. Set aside and keep warm.
  3. For the avocado salsa, combine all ingredients. Season to taste.
  4. Cut quesadillas into wedges. Serve with avocado salsa.
