Almond Shortbread Crescents
- 18 tbsp butter, at room temperature
- 1 1/4 cups powdered sugar
- 1 tsp almond extract
- 1 None large egg yolk
- 2/3 cup flour
- 1 tsp baking powder
- 2/3 cup ground almonds
- Preheat oven to 350u0b0F. Line 2 large baking sheets with parchment paper. For the dough, beat the butter, half the powdered sugar and the almond extract in a medium bowl until light and creamy. Add the egg yolk and beat until combined. Sift in the flour and baking powder and add the almonds. Using a flat-bladed knife, combine until evenly moistened and starting to form clumps. Using your hands, gather the mixture together into a dough.
- Scoop out rounded tablespoons of the dough and gently roll them into sausage shapes about 3 inches long and tapered at the ends. Place on the prepared baking sheets and shape them into crescents. Bake for 20 mins or until light golden brown. Transfer to a wire rack to cool. Generously sprinkle with the remaining powdered sugar before serving.
