Orange Yogurt Cake
- 2 None large eggs
- 165 g firmly packed brown sugar
- 2 tsp finely grated orange rind
- 90 g ground almonds
- 50 g wholemeal self-raising flour
- 95 g plain yogurt
- 60 g light cream cheese, softened
- 2 tbsp icing sugar
- 1 tbsp orange juice
- None None sliced orange rind, for decorating
- Preheat oven to 160u0b0C/140u0b0C fan/gas 3. Grease a closed 20cm round springform tin and line base and side with baking paper.
- Beat eggs, sugar and rind in a small bowl with an electric mixer until light and fluffy. Stir in ground almonds, flour and yogurt.
- Spoon mixture into tin and bake for about 45 mins. Stand in tin for 5 mins before turning, top-side up, onto a wire rack to cool.
- Meanwhile, make icing by whisking together cream cheese, icing sugar and orange juice in a small bowl until smooth. Spread cake with icing; top with thinly sliced orange rind.
