Frying Pan Lasagne

  1. Heat oil in a heavy-based frying pan on medium. Brown sausages for 4-5 mins, breaking up lumps with a wooden spoon. Add onion and garlic and cook for 3-4 mins.
  2. Increase heat to high. Stir in tomato puree and bring to a boil. Reduce heat to low and simmer, uncovered, for 8-10 mins, until thickened. Season to taste.
  3. Pour 1/2 cup sauce into an 8 inch oven-safe frying pan. Place 3 pasta pieces over sauce to cover. Top with one-third each of remaining sauce, cheese and pasta. Repeat layers, finishing with sauce and cheese. Cook over medium heat for 8-10 mins.
  4. Meanwhile, preheat broiler on medium. Place pan under broiler for 2-3 mins, until cheese is golden. Allow to stand for 5 mins before serving.
