Mushroom And Green Bean Salad(Cold)
- 3/4 lb. green beans (fresh)
- 2 Tbsp. minced shallots
- 1/4 c. mayonnaise
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. olive oil
- 1 Tbsp. Dijon-style mustard
- 2 c. sliced fresh mushrooms
- 1/4 c. chopped red bell pepper
- 1 Tbsp. minced fresh basil
- freshly ground black pepper
- tomato wedges (garnish)
- Cut beans into 1 1/2-inch lengths.
- Cover with water and cook on top of stove or add 3 tablespoons water and cook in microwave oven, just until beans are crisp-tender.
- Do not overcook.
- Drain beans.
- Cover with ice water to stop cooking; set aside.
- In small bowl, combine shallots, mayonnaise, lemon juice, oil and mustard; mix well.
