Mushroom And Green Bean Salad(Cold)

  1. Cut beans into 1 1/2-inch lengths.
  2. Cover with water and cook on top of stove or add 3 tablespoons water and cook in microwave oven, just until beans are crisp-tender.
  3. Do not overcook.
  4. Drain beans.
  5. Cover with ice water to stop cooking; set aside.
  6. In small bowl, combine shallots, mayonnaise, lemon juice, oil and mustard; mix well.
