Vegetable Quiche
- 2 None potatoes, peeled, cubed
- 1 None sweet potato, peeled, cubed
- 1 None red pepper
- None None olive oil, for drizzling
- 3 tbsp butter
- 2 cloves garlic, crushed
- 4 None large eggs
- 2 None spring onions, sliced
- 1 oz Parmesan cheese, grated
- None None salad, to serve
- Preheat oven to 350u0b0F. Arrange potato and sweet potato in a baking dish with the whole pepper and drizzle with olive oil. Bake 25-30 mins, or until potatoes are tender and pepper is blistered and blackened. Transfer pepper to a plastic bag. Set aside 5 mins, then peel off skin. Remove seeds and cut into strips.
- Preheat broiler to high. Melt butter in an oven-proof frying pan on high and saute garlic 1 min. Add potato, sweet potato and pepper, tossing well. Reduce heat to low. In a large bowl, whisk eggs and onion together and season to taste. Pour into pan with potatoes and cook 5-10 mins, until base is firm. Sprinkle top with Parmesan and broil 3-5 mins. Cut into wedges and serve with salad.
