Fried Fish With Strawberry Salsa
- 1 None potato
- 1/4 lb strawberries, hulled and cut into small cubes (1 set aside for garnish)
- 1 None spring onion, sliced thinly
- 1 tsp vinegar
- 1 tsp ketchup
- 1/2 tsp sugar
- 1 pinch cayenne
- 1 None red snapper fillet
- None None lemon juice, to taste
- 1/2 tbsp lemon pepper
- 1 tsp oil
- 1 tbsp sour cream
- None None chili flakes, for garnish
- Cook the potato in boiling salted water for 20-25 mins. Drain.
- For the strawberry salsa, mix the strawberries and spring onions in a bowl. Mix the vinegar, ketchup, sugar and cayenne then pour over the strawberry and onion mixture. Mix well and set aside to marinate.
- Meanwhile, drizzle the red snapper fillet with lemon juice and season with salt and lemon pepper. Heat the oil in a nonstick pan and saute the fish for 4 mins each side. Garnish with the strawberry salsa, lemon pepper and the remaining strawberry. Serve the potato with a dollop of sour cream and sprinkle with chili flakes.
