Chili Beef Stir Fry
- 1 tbsp soy sauce
- 1 tbsp Chinese cooking wine
- 2 tsp cornstarch
- 8.75 oz sirloin steak, trimmed, sliced
- None None FOR THE SPICY SEASONING
- 1 tbsp dried chili flakes
- 1 tbsp flaked sea salt
- 2 tsp black cracked pepper
- 1 tsp lime zest
- 1/2 tsp sugar
- 2 tbsp peanut oil
- 1 None onion, cut into wedges
- 2 oz bean sprouts
- 3/4 inch fresh ginger, peeled, finely sliced
- Combine soy sauce, wine, cornstarch and 1 tbsp water, stirring until smooth. Add beef and toss to coat. Cover and chill for 30 mins.
- Meanwhile, to make the spicy seasoning, dry toast chili flakes, salt and pepper over medium heat for 2-3 mins, until fragrant. Transfer to a mortar and pestle and pound with lime zest and sugar. Set aside.
- Working in batches, heat 1 tbsp oil in a wok. Stir-fry beef for 1-2 mins, until browned. Set aside. Add remaining oil and stir-fry onion for 1-2 mins, until just softened. Add bean sprouts and ginger. Stir-fry for 30 seconds, until fragrant. Return beef to pan and stir-fry for 1 min, until warmed through. Sprinkle spicy seasoning over top. Serve.
