Roast Goose With Fruit And Nut Seasoning

  1. Preheat oven to 400u0b0F.
  2. For the fruit and nut seasoning, heat 1 tbsp oil in a medium saucepan over medium-high heat. Cook giblets, stirring, until browned. Drain and set giblets aside. Add remaining oil to pan. Cook onion and celery, stirring, until onion is soft. Add apple and nuts. Cook, stirring, until nuts are lightly browned. Remove from heat and stir in giblets, apricots, raisins, mint and breadcrumbs. Let cool.
  3. Whisk together butter, honey and soy sauce in a small bowl. Brush over inside and outside of goose then fill with seasoning, securing opening with skewers. Tie legs together and tuck wings under. Prick skin to release fat during roasting.
  4. Lightly flour a large oven bag. Place goose in bag and secure with tie provided. Make holes in bag as advised on package. Place goose, breast-side up, in a roasting pan, cover with foil and roast for 1 hour. Remove foil and roast goose for 1 hour.
