Citrus Tiramisu

  1. Rinse a 6-cup loaf pan with cold water and line with foil. For the mascarpone cream, beat the egg yolks with the sugar. Mix the gelatin with the mascarpone and stir into the egg yolks, along with the mint and fruit segments. Beat the egg whites with the salt until stiff then fold into the mascarpone mixture.
  2. Soak the cookies in the orange juice and lay them in the loaf pan in alternating layers with the mascarpone cream. Refrigerate for 4 hours, then turn out of the pan and remove the foil. Slice to serve.
