Pork And Shrimp Fried Rice
- 9 oz ground pork
- 3 tsp soy sauce
- 2 cloves garlic, minced
- 2 tbsp vegetable or peanut oil
- 1 None medium Spanish onion, cut into thick wedges
- 1 None small red pepper, finely chopped
- 2/3 cup frozen pea and corn mix
- 1 (8 oz) can sliced bamboo shoots, drained
- 1 None small carrot, grated
- 21 oz cold cooked white rice
- 5 oz medium cooked, peeled shrimp
- 2 oz bean sprouts, rinsed
- 2 None scallions, thinly sliced
- None None cooked shrimp crackers, to serve
- Combine ground pork, 2 tsp soy sauce and garlic in a bowl. Cover with plastic wrap and chill for 15 mins to marinate.
- Heat a wok or large frying pan over high heat. Add 1 tbsp oil and swirl to coat surface. Working in batches, stir-fry pork mixture for 2-3 mins, breaking up any lumps, or until browned. Transfer to a heatproof bowl.
- Add remaining oil to wok. Stir-fry onion for 1-2 mins, or until tender. Add pepper, pea mix and bamboo shoots. Stir-fry for 2-3 mins, or until tender. Return ground meat to wok along with carrot, rice and shrimp. Stir-fry for 2-3 mins, or until heated through. Add remaining soy sauce and stir-fry for 1 min, or until combined. Remove from heat and add bean sprouts. Transfer to serving bowls and top with scallion. Serve with shrimp crackers.
