Mini Marzipan Doughnuts
- 200 g marzipan, grated
- 150 g butter, softened
- 175 g caster sugar
- 5 None eggs
- 250 g ricotta
- 1 1/2 None oranges, grated zest
- 5 tbsp orange juice
- 50 g plain flour
- 100 g ground blanched almonds
- 1 tsp baking powder
- Preheat oven to 400u0b0F. Grease a 12-cavity mini doughnut pan. Cream marzipan, butter and 1/3 cup sugar. Add eggs, 1 at a time, then add ricotta and 2/3 of orange zest. Add orange juice. Mix flour, ground almonds and baking powder then fold into marzipan mixture. Transfer to a piping bag and fill prepared pan. Chill remaining batter. Bake doughnuts for 10-12 mins, until a skewer comes out clean. Allow doughnuts to cool in pan for 10 mins.
- Meanwhile, mix remaining sugar and orange zest. Remove doughnuts from pan and toss in orange sugar. Transfer to a wire rack to cool completely. Wash and re-grease pan and repeat until all batter is used.
