Steaks With Cilantro Aioli
- 4 None beef sirloin steaks (about 6 oz each)
- 1/2 cup mayonnaise
- 1/4 cup coarsely chopped cilantro
- 2 cloves garlic, crushed
- 3 tsp lemon juice
- 4 oz baby spinach leaves
- 1 small red pepper, chopped
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 medium red onion, thinly sliced
- 1 tbsp vegetable or olive oil
- Heat a grill pan on medium-high heat or preheat the grill to medium. Cook the beef for 4 mins each side for medium, or until cooked to desired doneness. Transfer to a heatproof plate. Let stand, loosely covered with foil, for 5 mins.
- For the cilantro aioli, whisk the mayonnaise, cilantro, garlic, 1 tsp of the lemon juice and 1 tbsp water in a medium bowl.
- Combine the spinach, pepper, chickpeas, onion in a large bowl. Whisk the oil and remaining 2 tsp lemon juice. Drizzle over the salad and toss to combine. Spoon the salad onto plates. Serve the steak with salad, topped with cilantro aioli.
