Christmas Fruit Cake
- 3 1/3 c. sifted flour
- 3 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. clovess
- 2 eggs
- 1 egg, separated
- 3/4 c. butter or margarine, melted
- 1 1/2 c. sugar
- 1 1/2 c. applesauce
- 1 pkg. mixed dried fruit, chopped
- 1/2 c. golden raisins
- 1 c. chopped walnuts
- Grease and flour 2 Christmas tree cake pans.
- Preheat oven to 350u0b0.
- Mix flour, soda, salt, cinnamon, nutmeg and cloves in large bowl.
- Stir in eggs, reserve 1 white for icing, melted butter, sugar and applesauce; blend well.
- Stir in dried fruit, raisins and walnuts, mix well.
- Spread in prepared pans.
- Pans will be almost full.
- Bake for 45 minutes or until center springs back when lightly touched with fingertip.
- Cool in pans on wire rack for 10 minutes.
- Remove from pans, cool completely.
- Layers may be wrapped and refrigerated a week before use.
- May use Snow White Icing.
