Spanish Bean Soup(Guiso De Garbanzos)

  1. Saute onion and garlic in olive oil in large pot (cast-iron preferred).
  2. Add remaining ingredients and bring to a boil. Reduce heat and cover pot.
  3. Cook until potatoes are done.
  4. Do not add salt.
  5. There is enough in the ham and sausage to flavor the soup.
  6. If lower fat is preferred, omit the ham hock or refrigerate and skim.
