Candy Apples

  1. Line 2 baking sheets with parchment paper. Wash apples under cold water, and place on a wire rack to dry. Do not rub apples with a cloth. Push a wooden stick three-quarters of the way through each apple from stem end.
  2. For the candy mixture, combine sugar, glucose syrup, food coloring and 1 cup water in a large saucepan. Stir over low heat until sugar has dissolved. Boil, uncovered, 10 mins, or until mixture reaches 300u0b0F on a sugar thermometer. Remove from heat and allow bubbles to subside.
  3. Tilt pan slightly to one side and carefully dip an apple in the mixture. Twist slowly to coat. Remove apple slowly from candy mixture. Twirl apple around a few times over pan, then place on prepared baking sheet. Repeat with remaining apples. Leave to set in a cool, dry place and serve. Do not refrigerate.
