Pork And Turkey Medallions In Mushroom Sauce
- 12 slices bacon
- 1 lb pork tenderloin, sliced into 6 medallions
- 1 lb turkey breast, sliced into 6 medallions
- 2 tbsp olive oil
- 1/2 lb mushrooms, trimmed and thickly sliced
- 4 None spring onions, trimmed and sliced
- 1 cup garlic sauce
- 3/4 cup heavy cream
- 1/4 lb Gouda cheese, grated
- 1 1/2 lb small potatoes, peeled
- 1 1/2 tbsp butter
- 1 bunch fresh parsley, finely chopped
- Preheat oven to 350u0b0F. Wrap bacon slices around medallions. Heat oil in a large frying pan and saute medallions over high heat for 2-3 mins. Remove from heat and season. Add mushrooms and saute for 2-3 mins. Add spring onions and cook for 2 mins. Add garlic sauce and cream and season. Transfer medallions and mushroom sauce to a large baking dish. Sprinkle with grated cheese and bake for 30 mins.
- Meanwhile, cook potatoes in boiling salted water for 20 mins. Drain. Heat butter and saute 2/3 of chopped parsley. Toss with potatoes. Garnish casserole with remaining parsley and serve with potatoes.
