Pork And Turkey Medallions In Mushroom Sauce

  1. Preheat oven to 350u0b0F. Wrap bacon slices around medallions. Heat oil in a large frying pan and saute medallions over high heat for 2-3 mins. Remove from heat and season. Add mushrooms and saute for 2-3 mins. Add spring onions and cook for 2 mins. Add garlic sauce and cream and season. Transfer medallions and mushroom sauce to a large baking dish. Sprinkle with grated cheese and bake for 30 mins.
  2. Meanwhile, cook potatoes in boiling salted water for 20 mins. Drain. Heat butter and saute 2/3 of chopped parsley. Toss with potatoes. Garnish casserole with remaining parsley and serve with potatoes.
