Japanese Breaded Pork

  1. Place each piece of pork between two pieces of parchment paper. Pound to flatten.
  2. Lightly beat 2 eggs in a medium bowl. Dust each steak lightly with seasoned flour. Dip in eggs and coat well with breadcrumbs, pressing firmly. Chill for 15 mins.
  3. Heat oil in a large saucepan on high, until a few crumbs sizzle immediately when added. Fry pork for 5-7 mins, turning once or twice, until golden and cooked through. Drain on paper towel. Set aside, keeping warm.
  4. Heat stock, mirin and soy sauce in a medium saucepan on high. Bring to a boil. Add onion, reduce heat and simmer for 10 mins, until onion is tender. Lightly beat remaining eggs and slowly pour over onion. Stir once, when egg is nearly set.
  5. Divide hot rice between serving bowls. Slice pork steaks into 1/2 inch strips. Arrange pork over rice. Before egg is completely set, ladle stock mixture into bowls. Serve with scallion.
