Gluten Free Banana Coconut Pancakes
- 1/2 cup palm sugar
- 4 None bananas, 2 mashed, 2 sliced
- 3/4 cup rice flour
- 3/4 cup all-purpose flour
- 1/2 cup coconut milk
- 1 None large egg
- None None Canola oil, for frying
- None None Ice cream, to serve (optional)
- None None Lime wedges, to serve
- Place the palm sugar and 1/4 cup water into a small saucepan and bring to a boil. Reduce heat and simmer until mixture reaches a syrup consistency.
- Place the mashed banana, flours, coconut milk and egg into a bowl and mix thoroughly to combine.
- Heat a little oil in a frying pan over medium heat and place a heaped spoonful of batter into the pan. Cook until bubbles appear on the surface, then turn and cook until golden.
- Place the pancakes on serving plates and top each with sliced banana, a scoop of ice cream (if desired) and a lime wedge. Drizzle with palm sugar syrup.
