Seafood Newburg
- 1 lb. frozen cod
- 1 lb. shrimp
- 3 Tbsp. margarine
- 1 lb. mushrooms
- 1/3 c. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 4 c. half and half
- 1 c. milk
- 1 (10 oz.) pkg. peas
- 1 (6 oz.) pkg. frozen Alaskan crab
- 1/4 c. cooking sherry
- 3/4 c. shredded Velveeta cheese
- 2 Tbsp. pimentos (for color)
- Cut fish into bite size pieces.
- Shell and devein shrimp, if using fresh.
- In margarine, cook the mushrooms until tender; remove to bowl.
- Melt 4 tablespoons margarine.
- Stir in flour, salt and pepper.
- Blend and cook 1 minute.
- Stir in half and half and milk. Stir until smooth.
- Add fish, shrimp, peas, crab, sherry and mushrooms.
- Cook until fish flakes easily.
- Add cheese and pimentos.
- Simmer gently 5 minutes.
- Serve over biscuits.
- Sprinkle with paprika.
- Serves 8.
