Feta Stuffed Chicken With Vegetables
- 1 None carrot, peeled and cut into matchsticks
- 1 small parsnip, peeled and cut into matchsticks
- 1 small onion, peeled and cut into wedges
- 2 None baby zucchini, guartered
- 2/3 cup chicken stock
- 2 tsp honey
- 1 tsp soy sauce
- 1/3 cup crumbled feta cheese
- 2 tsp fresh chopped parsley
- 1 None boneless skinless chicken breast (about 6 oz)
- 3 slices prosciutto
- Preheat the oven to 400u0b0F. Place the vegetables in a small baking dish. Mix the chicken stock, honey and soy sauce. Pour over the top. Bake for 15 mins.
- Meanwhile, mix the feta cheese and parsley. Cut a deep pocket in the side of the chicken breast; fill with the feta mixture. Wrap the prosciutto around the chicken. Place on top of the vegetables. Season with freshly ground black pepper.
- Bake 20-25 mins until the chicken is cooked through and the vegetables are tender. Slice the chicken and serve with the vegetables.
