Watermelon Sorbet With Vodka Fruit Salad
- None None Watermelon Sorbet
- 1/2 cup sugar
- 1 lb watermelon, pureed
- 1/4 cup lime juice
- 2 None egg whites, lightly whisked
- None None Fruit Salad
- 1/4 cup vodka
- 1 tbsp sugar
- 1 tbsp lime juice
- 9 oz strawberries, finely chopped
- 1 None Granny Smith apple, cored, finely chopped
- 7 oz pineapple, finely diced
- In a small saucepan, combine sugar and 1/2 cup water. Stir over a medium heat until sugar dissolves. Simmer for 6-8 mins, without stirring, until mixture is syrupy. Remove saucepan from heat and allow to cool completely.
- Using a fine sieve, strain watermelon into a large bowl. Stir in syrup and juice. Fold in egg whites. Pour into an ice cream maker and process according to manufacturer's instructions.
- Pour mixture into a loaf pan, cover with plastic wrap and freeze for 3 hours until firm.
- Meanwhile, prepare the vodka fruit salad: In a small bowl, stir vodka, sugar and juice together until sugar dissolves. Place fruit in a bowl and pour over vodka mixture.
- Divide fruit among glasses and spoon over juices. Top with a scoop of sorbet to serve.
