Orange And Pine Nut Biscotti
- 8 tbsp (1 stick) unsalted butter, at room temperature
- 3/4 cup sugar
- 3 None eggs
- 1/4 cup Grand Marnier or other orange liqueur
- 1 None orange, peel grated
- 1 1/2 cups flour, sifted
- 3/4 cup self-rising flour, sifted
- 1 cup pine nuts, toasted
- Preheat the oven to 350u0b0F. Line 2 baking pans with parchment paper.
- Beat butter and sugar in large bowl with an electric mixer until pale and creamy. Add eggs, one at a time, beating well after each addition. Stir in liqueur and orange peel. Fold in remaining ingredients until mixture forms a soft dough.
- Divide dough in half. Shape each piece into a 12 x 3 inch log. Slice logs into 1 inch slices. Place on prepared pans.
- Bake for 25 mins. Cool on pans 5 mins. Remove from pans; cool completely on a wire rack.
