Peanut Chocolate Crunch Balls
- 20 None chocolate wafer cookies
- 1/2 cup crunchy peanut butter
- 7 oz semi-sweet chocolate, chopped
- 1 tsp vanilla extract
- 1 cup sweetened flaked coconut
- 1 1/2 cups cocoa powder
- Process chocolate wafer cookies in a food processor until finely crushed. Measure 1 cup.
- Place peanut butter, chocolate and vanilla in a bowl over a saucepan of simmering water (don't let base of bowl touch the water). Cook and stir for 3 mins or until smooth. Remove bowl from pan. Add crushed cookies and coconut; stir to combine. Let stand for 30 mins or until firm.
- Line a baking pan with parchment paper. Sift cocoa into a bowl. Using damp hands, roll tablespoon measures of chocolate mixture into balls. Roll balls in cocoa to coat. Place on prepared pan. Refrigerate for 1 hour or until firm.
