Fruit, Ricotta And Almond Parcels

  1. Preheat oven to 425u0b0F. Lightly spray 2 baking sheets with cooking oil and line with parchment paper.
  2. Place 1 sheet of phylo on a dry surface. Lightly spray with oil. Repeat until there are 4 layers. Make 2 more stacks with remaining phyllo. Cut each stack in half width-wise.
  3. For the filling, combine ricotta and sugar, blending well. Place an equal amount in the center of each phyllo square, leaving a 3/4 inch border. Divide fruit and biscotti evenly between the squares. Pull corners of squares together to enclose filling, forming a money bag shape. Arrange on baking sheets.
  4. Lightly spray parcels with oil and sprinkle with cinnamon sugar. Bake for 15-20 mins or until golden brown. Serve with vanilla yogurt.
