Chili Lime Tiger Shrimp Salad
- 5 1/4 oz package mixed greens
- 1 bunch spring onions, finely sliced
- None None Zest from 1/2 lime, removed with vegetable peeler or paring knife and then cut into thin matchsticks
- 1 handful fresh cilantro leaves
- 7 oz ready-to-eat tiger shrimp
- 1/2 None red chili, seeded and finely chopped
- None None For the Dressing
- 6 tbsp mayonnaise
- None None Juice of 1 lime
- None None Finely grated zest of 1/2 lime
- None None Poppadums, or other crisp flatbread, to serve
- Place greens in a bowl. Add onions, lime zest, cilantro leaves, shrimp and chili. Toss ingredients together.
- Arrange salad in 4 serving bowls. Place the dressing ingredients in a bowl and season. Whisk together then drizzle over the salad. Serve with poppadums.
