Hazelnut And Apple Friands
- 2/3 cup powdered sugar, sifted
- 2 cups ground hazelnuts
- 1/2 cup all purpose flour, sifted
- 13 tbsp butter, melted
- 1 tsp vanilla extract
- 1 None green apple, peeled, cored, chopped
- 6 large egg whites
- 1/2 cup roasted hazelnuts, skin removed, chopped
- None None powdered sugar, for dusting
- Preheat oven to 350u0b0F. Lightly grease a 12-hole friand pan.
- In a bowl, combine powdered sugar, ground hazelnuts and flour. Mix in butter and vanilla, stirring gently until just combined. Fold apple into the batter.
- In a clean bowl, lightly whisk egg-whites until frothy. Fold in the hazelnut batter.
- Divide batter evenly between friand pans. Sprinkle with chopped hazelnuts. Bake 20-25 minutes, or until cooked through when tested with a toothpick.
- Cool 5 minutes in pan, then turn onto a wire rack to cool completely. Dust with powdered sugar, to serve.
