Beef Chow Mein
- 1 tbsp canola oil
- 1 inch ginger, minced
- 1 clove garlic, minced
- 1 lb ground beef
- 2 tsp curry powder
- 1/2 None chinese cabbage, finely shredded
- 1/4 lb green beans, trimmed and chopped
- 1 None carrot. peeled and cut into matchsticks
- 1 stalk celery, sliced
- 1 - 7 oz can water chestnuts, drained and sliced
- 1 cup chicken stock
- 1/4 cup oyster sauce
- 2 tbsp soy sauce
- 1 None long red chili, deseeded and chopped
- 1 tsp sesame oil
- 14 oz rice noodles, soaked and drained
- 1/2 cup fresh cilantro, chopped
- 1 oz crushed peanuts (optional)
- Heat oil in a wok over high heat. Add onion, ginger and garlic and stir-fry for 1-2 mins until onion is tender. Add ground beef and curry powder and cook for 4-5 mins, until browned. Add vegetables, water chestnuts, stock, oyster sauce, soy sauce, red chili and sesame oil. Stir-fry for 1-2 mins until cabbage begins to wilt and vegetables are tender. Add noodles and cilantro and stir-fry for 1 min. Serve sprinkled with peanuts, if using.
