Chocolate Cookies With Sprinkles
- 8 tbsp (1 stick) butter, softened
- 3/4 cup firmly packed brown sugar
- 1 None egg
- 1 1/2 cups flour
- 1/4 cup self-rising flour
- 1/4 cup unsweetened cocoa powder
- 6 oz semi-sweet or milk chocolate, melted
- 1/3 cup multi-colored sprinkles
- Beat butter, sugar and egg in a large bowl with an electric mixer until combined. Sift flours and cocoa powder into a medium bowl. Stir into the dough, in two batches.
- Knead the dough on a floured surface until smooth. Roll out between 2 sheets of parchment paper to 1/8 inch-thickness. Cover and refrigerate for 30 mins.
- Preheat the oven to 350u0b0F. Grease 2 baking pans and line with parchment paper.
- Using different shaped cookie cutters, cut shapes from the dough. Place the shapes on the prepared pans.
- Bake for 10-12 mins, depending on their shape and size. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
- Spread the tops of cookies with the melted chocolate. Decorate with the sprinkles. Let stand until chocolate is set.
