Sirloin Steak With Cafe De Paris Butter

  1. For the cafe de paris butter, combine all ingredients except steaks and oil in a medium bowl. Beat with an electric mixer, until pale and combined. Spoon onto a piece of plastic wrap, forming a log shape. Roll up and twist ends. Refrigerate until firm.
  2. Bring steaks to room temperature before cooking. Brush with oil and season to taste.
  3. Preheat grill pan or large skillet on high heat. Cook steaks 4 mins each side for medium-rare, or cook to desired doneness.
  4. Place steaks on serving platter. Top each steak with a slice of the butter. Let stand, loosely covered with foil, 5 mins. Serve with mash potatoes and beans.
