New Potatoes Gratiner
- 1/2 stick margarine
- 1/4 c. warm water
- 1 small onion, finely chopped
- 1/4 c. finely chopped parsley
- 1 medium garlic clove, minced
- 1/4 tsp. freshly ground pepper
- 1/2 lb. fresh mushrooms
- 2 lb. small red-skinned potatoes, thinly sliced
- 3 oz. shredded Swiss cheese
- 1/2 tsp. salt
- 1 1/2 c. heavy cream
- Preheat oven to 325u0b0.
- Grease a 13 x 9-inch Pyrex dish.
- Trim mushroom stems flush with cap.
- Thinly slice lengthwise.
- In large bowl, toss potatoes, mushrooms, onion, parsley, 2 ounces cheese, garlic, salt, pepper and 1 1/2 tablespoons melted butter.
- Place in prepared dish.
- Mix 1/4 cup warm water with 1 1/2 cups heavy cream and pour over potatoes.
- Sprinkle with remaining cheese.
- Dot with butter.
- Bake for 1 1/2 hours.
- As soon as cheese browns, cover with loose tent of foil and continue baking.
