Duck With Plum Sauce
- 4 None boneless duck breasts
- 1 tbsp oil
- 2 tbsp butter
- 1/2 None red onion, thinly sliced
- 2 None bay leaves
- 3 None whole cloves
- 1 can (28 oz) seedless plums, drained, 1/4 cup juice reserved
- 2 tbsp packed brown sugar
- 1 tsp finely grated lemon peel
- Heat large skillet on medium heat. Spray with no stick cooking spray. Cook duck, skin-side down, 5-6 mins. Turn and cook 3 mins longer. Let stand, loosely covered with foil, 10 mins.
- Meanwhile, heat oil and butter in saucepan on medium heat. Add onion and saute 2-3 mins until tender. Add bay leaves and cloves, stirring 1 min until fragrant.
- Add plums, reserved juice, sugar and lemon peel. Bring to a boil, stirring. Reduce heat to low and simmer 10 mins. Season to taste. Slice duck and serve with plum sauce.
