Mozzarella Bites With Caper Sauce

  1. Top 6 slices of bread with mozzarella then sandwich with remaining bread.
  2. Beat eggs lightly in a shallow bowl along with 1 tbsp parsley. Dip sandwiches into egg mixture to coat.
  3. Heat oil and butter in a large frying pan over medium-high heat. Carefully cook sandwiches for 2-3 mins per side, until golden. Set aside and keep warm.
  4. Add garlic, capers, anchovies and olives to pan and cook for 1 min. Add wine and bring to a boil. Simmer for 1 min, until slightly reduced. Add remaining parsley and season.
  5. Drizzle caper sauce over sandwiches. Serve with salad.
