Mozzarella Bites With Caper Sauce
- 12 slices baguette
- 6 slices mozzarella
- 2 None eggs
- 2 tbsp fresh parsley leaves, chopped
- 2 tbsp oil
- 1 tbsp butter
- 1 clove garlic, minced
- 1 tbsp chopped capers
- 1 tbsp chopped anchovies
- 1 tbsp chopped pitted kalamata olives
- 1/2 cup dry white wine
- None None salad, to serve
- Top 6 slices of bread with mozzarella then sandwich with remaining bread.
- Beat eggs lightly in a shallow bowl along with 1 tbsp parsley. Dip sandwiches into egg mixture to coat.
- Heat oil and butter in a large frying pan over medium-high heat. Carefully cook sandwiches for 2-3 mins per side, until golden. Set aside and keep warm.
- Add garlic, capers, anchovies and olives to pan and cook for 1 min. Add wine and bring to a boil. Simmer for 1 min, until slightly reduced. Add remaining parsley and season.
- Drizzle caper sauce over sandwiches. Serve with salad.
