Lamb Chops With Tomato And Cilantro Salsa
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 2 cloves garlic, crushed
- 1 tsp olive oil
- 2 tbsp finely grated lemon peel
- 1/4 cup lemon juice
- 12 None lamb chops, french trimmed
- None None FOR THE TOMATO AND CILANTRO SALSA
- 2 small tomatoes, finely chopped
- 1 small red onion, finely chopped
- 1 clove garlic, crushed
- 1 tbsp red wine vinegar
- 1 tbsp finely chopped fresh cilantro
- Combine spices, garlic, oil, and lemon peel and juice in a shallow dish. Add lamb chops; rub mixture all over lamb. Let stand 10 mins.
- Meanwhile, for the tomato and cilantro salsa, combine all ingredients in a medium bowl. Season to taste.
- Heat an oiled grill pan on high heat or preheat the grill to medium-high. Cook lamb chops until browned on both sides and cooked to desired doneness.
- Serve lamb chops topped with salsa.
