Honey Mustard Pork With Potato Salad

  1. Preheat oven to 425u0b0F. Line a roasting pan with parchment paper.
  2. Combine honey, garlic and mustard in a large bowl; add pork. Toss pork in sauce to coat evenly. Place pork on a wire rack in prepared pan. Bake for 25 mins or until glazed and cooked.
  3. Meanwhile, make potato salad: Place potatoes in a large saucepan and cover with cold water. Bring to a boil. Boil for 10 mins or until tender. Drain. When cool enough to handle, cut potatoes into quarters. Combine potato and remaining ingredients in a large bowl. Season to taste.
  4. Serve pork with potato salad and mixed greens.
