Honey Mustard Pork With Potato Salad

- 1/3 cup honey
- 3 cloves garlic, crushed
- 1 tbsp wholegrain mustard
- 6 None pork loin medallions
- None None Potato Salad
- 1 lb fingerling potatoes
- 1 None small red onion, halved, thinly sliced
- 1 tbsp red wine vinegar
- 2 tbsp vegetable or olive oil
- 1/3 cup flat leaf parsley, coarsely chopped
- None None Mixed greens, to serve
- Preheat oven to 425u0b0F. Line a roasting pan with parchment paper.
- Combine honey, garlic and mustard in a large bowl; add pork. Toss pork in sauce to coat evenly. Place pork on a wire rack in prepared pan. Bake for 25 mins or until glazed and cooked.
- Meanwhile, make potato salad: Place potatoes in a large saucepan and cover with cold water. Bring to a boil. Boil for 10 mins or until tender. Drain. When cool enough to handle, cut potatoes into quarters. Combine potato and remaining ingredients in a large bowl. Season to taste.
- Serve pork with potato salad and mixed greens.
