Ham, Turkey And Roasted Vegetable Sandwiches
- 1 loaf French bread
- 1/3 cup mayonnaise
- 1/4 cup wholegrain mustard
- 7 oz cooked ham, thinly sliced
- 3 oz roasted eggplant antipasti (from a jar), drained
- 3 oz roasted red pepper antipasti (from a jar), drained
- 7 oz roast turkey, thinly sliced
- 1/2 cup canned button mushrooms, drained
- 1/2 cup sundried tomatoes, drained
- 2 cups arugula
- Using a serrated knife, slice bread in half lengthwise.
- In a small bowl, combine mayonnaise and mustard. Spread one third of the mixture inside the loaf.
- Place ham in the loaf, then layer the eggplant, pepper and turkey on top. Spread the turkey layer with half the remaining mayonnaise mixture.
- Scatter with mushrooms and sundried tomatoes, pressing down gently. Spread with remaining mayonnaise mixture and top with arugula. Replace the bread lid, pressing down firmly.
- Tie kitchen string firmly around the loaf, then wrap tightly in plastic wrap. Chill for 2-3 hours, until firm. Serve cut into wedges.
