Vanilla And Cinnamon Apples With Chocolate Sauce
- 3 tbsp heavy cream
- 2 oz dark chocolate, chopped
- 1-2 tbsp butter
- 1/2 None cinnamon stick
- 1/2 None vanilla bean, split lengthwise
- 1 1/2 None Gala or Granny Smith apples, cored and thinly sliced
- 1-2 tsp sugar
- 1 None small pear, cored and diced
- None None Mint sprigs, for garnish
- Heat the cream in a saucepan until just warm, then stir in the chocolate until melted. Remove from the heat and cool, stirring occasionally.
- Melt the butter in a separate saucepan over medium heat. Add the cinnamon stick and scrape in the vanilla seeds. Cook, stirring, for 1-2 mins. Add the apple slices, sprinkle with half of the sugar and cook for 2-3 mins, turning often. Transfer the apple slices to two plates. Add the pear to the saucepan, sprinkle with the remaining sugar and cook for 1-2 mins. Scatter the pear over the apple slices. Drizzle over some of the chocolate sauce and garnish with mint sprigs. Serve the remaining chocolate sauce on the side.
