Cold Shrimp Salad
- 7 oz bean thread noodles
- 1 clove garlic, crushed
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 2 tsp peanut oil
- 2 lbs large cooked shrimp, peeled and deveined, tails intact
- 1/4 cup roasted unsalted peanuts, coarsely chopped
- 2 None green onions, thinly sliced
- 1/4 cup coarsely chopped fresh cilantro
- 2 None fresh red Thai chili peppers, seeded and thinly sliced
- Place noodles in large heatproof bowl; cover with boiling water. Let stand until just tender; drain. Using kitchen scissors, cut noodles into random lengths. Place in a large bowl.
- Whisk garlic, sauce, lime juice and oil in small bowl to combine.
- Add shrimp, peanuts, onion, cilantro, chili pepper and dressing to noodles; toss gently to combine.
