Pork Chops With Braised Vegetables And Apple Salsa

  1. In a large frying pan, heat 1 tbsp oil over high heat. Sprinkle pork with pepper. Cook for 3 mins then flip over and cook for another 2 mins. Set aside, covered, to rest.
  2. Add remaining oil to pan. Saute cabbage for 1 min over medium heat. Add stock and lemon juice. Simmer for 3-4 mins, stirring, until cabbage is tender. Add broccoli and cook, covered, for another 2 mins, until broccoli is just tender. Season.
  3. Meanwhile, to make the apple salsa, mix all ingredients together in a bowl. Season.
  4. Serve pork on a bed of vegetables. Top with apple salsa.
